Calling All Casseroles

The time has come to begin stocking the freezer. I am asking for your best, make-ahead, freezer meal so that the oven can do all my cooking for at least a few weeks when the baby arrives. And I read your blogs, so I KNOW you share wonderful recipes and cook stuff at least sometimes. See, when Elle was born, we were a part of a wonderful Sunday School class that made sure we were well nourished for at least a month after she was born. For two years now, we have bounced around a bit, unable to find a church "home". I think we have finally decided, but we've just been attending worship. We haven't joined the church or a small group--translation, I can't count on others to feed us this time. On another note, my mom will be teaching summer school in June {of all months-how dare she, right?} so she will just be weekend help at best. I realize now, I could have easily done it when it was just Elle. Now I have a 4 year-old (in 8 days), a 21-month old and I'm 36+ weeks pregnant. Please feel sorry for me and give me your recipes.
**Disclaimer: I am just trying to be funny. I am very, very thankful for my three miracles and love that I will have three children. However, I also know the first few months (years) will be exhausting. No preschool, No Mother's Day Out, and 11-12 hour work days for Daddy. I know you other moms out there can sympathize/empathize with me.

you have come to the right place. quick question...are you also ok with utilizing a crockpot? and another one...how picky are your eaters? mine are the worst. but i don't worry about them. i just cook what i want and they can eat cereal haha!!

crockpot-yes! not too picky eaters. and i do the same. i cook and they eat or don't eat.

I've got a few recipes I'd love to share with you. It would be a lengthy comment, but if you'll post your email or send me your email address via my blog I'll be happy to send them all to you. I am still utilizing my meals in my freezer and my "little one" is now over 2 months old. It's great!

I will e-mail you a few, too! I have a great chicken tetrazzini recipe that makes 2 batches (I always freeze one, but you can freeze both) and everyone in my family will eat. Let me find it and e-mail it to you (and my sister in law who asked for it abotu a month ago...)

chicken pot pie-lay one pie crust in round glass pyrex. in large bowl mix one bag frozen mixed veggies, large can cr. of chicken and about 3-4 cooked chicken breasts-cubed or shredded). pour into dish. cover with another pie crust.

bake at 350 for about 45 minutes or until crust is brown. I cover the edges of the crust with foil so they don't burn.

you can also make some spaghetti and meat sauce ahead of time and freeze it. then all you have to do is defrost it and cook some noodles.

I would like it noted that the sorry excuse for a have-to-work-for-a-living mom/grandma mentioned in this post would love nothing better in this world than to permanently live in a family compound with all of her children and grandchildren...as this is not currently $$$ possible, she has provided some $$$ (from her WORK earnings) for several SupperStudio meals to fulfill her dear daughter's wishes to stock the postnatal freezer...AND is joyfully thankful to be able to spend next week with said daughter and family to assist in any and every way requested...AND has promised to make the 600 mile drive every weekend in June..AND to stay in Calera as many days/weeks in July as the dear son-in-law can tolerate...;0

i was hoping some recipes were posted. thanks for the reminder to make double batches. i have a deep freeze that i really need to utilize more often. i hope all those emailed recipes help you tons. hang in there. i hear the $3 meal-in-a-box's aren't bad.
